While planning my holiday “Favorite Things” party, I decided to make this easy and favorite Italian Brunch Torte. Made with soft and flaky Pillsbury Crescent Rolls, Italian meats, cheeses, spinach, and egg, it’s an all-in-one meal that feeds a group! It’s the perfect brunch dish that will keep your party planning simple.
As the holiday season gets closer and closer, you might be starting to think about entertaining. For the past few years, the holidays have been BUSY. Before we had kids, a group of friends and I used to make sure we got together every holiday for dinner or drinks. When we had kids, that changed to kid-friendly brunches and lunches. But the last few years, schedules were so tight that we weren’t able to plan anything. I decided to make things different this year and plan a “Favorite Things” Brunch.
If you’re not familiar, a “Favorite Things” party is where everyone chooses a favorite item (usually a $10 limit—nail polish, hand cream, small jewelry item, etc) to share with friends. You purchase enough of the items for each guest to have one, and then everyone leaves with a gift bag filled with a number of new items to try. It’s honestly so much fun and each guest feels like they’ve left with a goodie bag of their friends’ fave items!
To make this brunch happen, I knew the planning had to be simple. I wanted to be able to pick everything up on my shopping trip to Stop and Shop, my local Ahold banner store. Since the guests bring their favorite things, the only thing I had worry about was the food. On the menu were mimosas and an Italian Brunch Torte.
This brunch torte is SO easy to make, and everyone loves it. Pair it with a green salad and some fruit for dessert, and it’s the easiest menu ever.
To make the torte, you’ll want to use a springform pan. I picked up Pillsbury Crescent Rolls and Pillsbury Pie Crust along with the other ingredients, which included eggs, baby spinach, mushrooms, Parmesan cheese, provolone, ham, and salami at my local Stop and Shop. You’ll find the complete recipe below but to walk you through how easy it is, read on!
Starting with a greased springform pan, preheat the oven to 350 degrees. You’ll want to open your Pillsbury Crescent Rolls (these give the torte its light, flaky, and delicious crust) and unroll into the individual triangles. I used some Pillsbury Pie Crust on the bottom to give it a sturdy base but layered the crescent rolls along the bottom and edges. You’ll need 2 packages.
Once your dough is in the pan, you’ll want to begin layering. I start with the meat and cheese. Then, add the mushrooms and spinach—followed by a mixture of whisked egg and Parmesan cheese. You’ll repeat this until you’re at the top of the pan. Layer crescent rolls across the top to fully cover your torte and brush with melted butter. Cook for about 40 minutes and allow to set for at least 10-15 minutes before serving.
It’s a great departure from your typical quiche brunch and is really filling with the meats, cheese, and eggs. If you try this, let me know how it turns out.
