Tomato & Mozzarella Friselle

This simple, no fuss recipe for Tomato & Mozzarella Friselle, along with a go-to antipasti spread and SANPELLEGRINO® Momenti – perfect for all your entertaining this spring and summer!

With the warmer months here, you might be entertaining more. I don’t know about you but I dislike firing up the kitchen stove and oven in the hot months. I much prefer enjoying simple, no-fuss foods when we entertain and if we do cook, it’s always on the grill. I want to share an easy idea for when you have company – and it’s informal, maybe impromptu. This is the kind of recipe and spread you can throw together in a snap! 

Always have the ingredients for antipasti on hand – artichoke hearts, a good cheese, some pepperoni, prosciutto, crackers, olives — whatever you like! Prepping for your company is a breeze when you lay everything on a tray and allow people to help themselves. 


Along with that, we like to enjoy Tomato and Mozzarella Friselle. 


The recipe is below, but the short of it is that Friselle are twice baked bread.  They usually have a rough side and smooth side.  Friselle are found throughout all of Italy but especially popular in southern Italy. Since they have a very long shelf-life, they were popular during difficult economic times in the country. Friselle are very easy to make (also below!)  and are a great to have around the house for quick snacks and simple lunches or entertaining! 

While I was shopping at Walmart for all the things I needed before entertaining over the Mother’s Day weekend, I picked up SANPELLEGRINO® Momenti. Already a fan of the brand, I was excited to try these exciting flavors. They are a new low-calorie sparkling fruit drink and they have such a beautiful pop of color!  They are such a fantastic alternative to soft drinks at just 35 calories, with no added sugar. I love the vibrant flavor mixes they created: 

Clementine & Peach

Pomegranate & Blackcurrant 

Lemon & Red Raspberry


These are made with a blend of real juice and fine carbonated water. The distinctive ingredients earn it a place when entertaining – such a standout that everyone will be reaching for! 

RECIPE

Tomato & Mozzarella Friselle

The Friselle: If you have a good quality Italian-food store, you can find the authentic ring-shaped friselle, making this even easier! If not, make it yourself! Pick up a high-quality loaf of Italian bread, or small rolls. Cut in half (if rolls) or into small portions for long bread. Bake on the LOWEST setting of your oven for 6-8 hours. I like to brush mine with a little olive oil. Once baked, cool completely and store in an airtight container. They last a while! 

Friselle 

Olive Oil 

Salt/Pepper

Ricotta

Mozzarella Pearls 

Diced Fresh Tomatoes

Instructions:

Run your friselle under warm water for just a second. Shake or squeeze out excess water. 

Allow to sit face down for 10 minutes. 

Combine Tomatoes and Pearl Mozzarella in bowl – top with salt and pepper to taste. 

Drizzle a little olive oil over the surface of the friselle. 

Top with small smear of ricotta cheese and tomato/mozzarella mixture. 

Serve with other assorted antipasti,  some good company, and good drink, like SANPELLEGRINO Momenti – and done. 

I was able to stock up on SANPELLEGRINO® Momenti Clementine & Peach and Pomegranate & Blackcurrant at Walmart. I love shopping for my groceries online, letting Walmart know I’m on my way and picking up right in the parking lot. It makes this busy mom’s life so much easier.
