Spinach and Cheese Stuffed Pork Chops with Sauteed Tomatoes

I really love the flavor combination of the pork with the cheese, tomatoes and spinach. You can’t go wrong with this meal and you can choose what type of cheese you and your family will like best.

All you need are Hatfield® Premium Reserve Pork® Boneless Pork Chops, which I picked up at ACME. These make things SO SIMPLE. All you have to do is take them out of the package, season and cook.

To get started, you’ll need:

Hatfield® Premium Reserve Pork® Boneless Pork Chops

Spinach – 1 handful baby spinach

Cheese of Choice (Mozzarella, Gouda, Fontina, Provolone or Gruyere all work well)

Salt, Pepper and Seasonings to Taste

Variety of Cherry Tomatoes – season with salt/pepper and drizzle with olive oil to saute. 

Directions: 

The pork chops should be sliced open to create a pocket for the fillings to fit into. Be sure to stop short of cutting all the way through, creating a pocket, rather than two pieces. Add spinach, and cheese. If the pork chop doesn’t stay together well, use a toothpick to hold together for cooking.

I like to cook the pork in a pan to get some browning (about 3 min on each side in olive oil in a skillet), then transfer to finish cooking in the oven at  400°F for about 12 minutes. Always use a meat thermometer to tell you when it is safely done. 

Meanwhile, take seasoned cherry tomatoes and saute in olive oil in a small pan until they reach desired tenderness. Serve as a side. 

Remove all toothpicks from the pork  and allow to sit for 2-3 minutes. Serve & enjoy!
