If you’re planning to host the Big Game this year, then you’re probably looking for a few recipes for your guests to enjoy – and these colorful Pork Tostadas are a great way to go beyond chips & dips (not that there isn’t a place for chips & dip….there is!) and take your party to the next level.
I love everything about these! There’s crunch, savory pork, fresh, colorful veggies and they combine into a great dish!
For this meal, I used Hatfield Touch of Sea Salt Dry Rub Seasoned Pork Loin Filet, but you can also do a variation and use any of Hatfield’s Ground Sausage – like the Hatfield Sweet Italian Ground Sausage, both of which I found at ShopRite here in the northeast.
The ingredients for this are suprisingly simple and include:
4 (6-inch) flour tortilla
2 to 3 cups pulled pork (warmed) from Hatfield Touch of Sea Salt Dry Rub Seasoned Pork Loin Filet – cooked in slow cooker and seasoned with Sazron
1 tablespoon olive oil
1 tablespoon butter
2 cups lettuce (shredded) I used Butter Lettuce
1 cup cherry tomatoes, cut into quarters
1/2 red onion, diced
pinch of salt and pinch of pepper
3 ounces queso fresco cheese (to garnish)

I ch9se the Hatfield Touch of Sea Salt Dry Rub Seasoned Pork Loin Filet because it’s great flavor made easy. It was slow-cooker ready, which is exactly how I prepared the pork to get it tender and recipe-ready. I simply seasoned the pork loin filet with Sazron (spice) and added to my slowcooker to cook on low for 4 hours.
Keep the meat moist and when ready, shred with two forks. You can do this ahead of time and warm up when ready to prepare the dish.
Make the Pork
Make the Tortillas. In a large skillet over medium heat, add oliver oil and butter. Cook each toritilla until golden brown. Set on paper towels to dry.
Meanwhile, combine the tomatoes, onion, lime juice, salt & pepper, mix and drizle with olive oil.
Assemble the Hatfield Pork Tostatas by adding pork, then covering with a sprinkling of cheese, shredded butter lettuce, the tomato, onion mix and a garnishing of cheese on top.
Serve these when warm to the table right in front of your big screen, just in time for the Big Game! Cut into fourths for easy eating!
