Weeknight Meal: Easy Chicken Piccata with Spaghetti with Cherry Tomatoes

It’s a common theme around here. Busy weeknight. Hungry family. Limited time. All too often, our weeknights go like this. It can be really tempting to order out or pick up something up on the go, but  that’s expensive and not always the best for you. Some simple hacks can help you get a meal on the table every night in no time at all. One strategy I use is to meal prep on the weekends and the other is to use meal starters to make cooking faster and easier, without sacrificing on the quality of a home- cooked meal.

This recipe for Chicken Piccata with Spaghetti with Cherry Tomatoes is literally amazing, and tastes straight out of your favorite Italian restaurant. You only need a few items to get this meal on the table in minutes.

Ingredients:
Michael Angelo’s High Protein Meal Starter: Chicken Piccata (Easy to find at Walmart in the Frozen Meal
section)
Spaghetti of Choice
Cherry Tomatoes – 2 cups, halved
1 TBSP EVOO
1 TSP Italian Seasonings
1/3 C. Parmesan Cheese – Freshly Grated

Instructions: 

The meal starter kit is best prepped in the oven, but at only 30 minutes cook-time, you can prep the spaghetti, set the table, pour your favorite beverages and be ready for a this amazing dinner. (Note: you can cook in the microwave if need be!)

While the Chicken Piccata is cooking, in the carton, at 400 degrees, with film on, you’ll want to boil your water and cook your pasta to desired consistency. Once drained, add the pasta with a little reserved pasta water to the pot. Add olive oil, salt, pepper to taste, and Italian seasonings. Gently combine.

Add cherry tomatoes and parmesan cheese and combine once more.

Once the Chicken Piccata is cooked, serve pasta and chicken piccata family-style.
