Easy Weeknight Meal : Pesto, Arugula and Feta “Pizza”

Fall can be such a busy time of year for families, mine included. When it comes to meals, no fuss solutions are always preferred! But no-fuss does not need to mean unhealthy. I’ve got some solutions you and your family will love, along with a simple, easy weeknight dinner idea that features a Pesto, Arugula & Feta Pizza. 

At the center of my easy weeknight meal, is the new RAGÚ® Simply Chunky Marinara Pasta Sauce. Made with 100% olive oil, with no added sugar, it’s a great way to keep your meal healthy and delicious. To start of the weeknight meal, I simmered the RAGÚ pasta sauce, and started cooking our new favorite pasta, Cali’flour Cauliflower and Yellow Lentil Penne. This pasta is A-MAZ-ING! With only two ingredients, it is high protein and tastes great.

Tip: To get your pasta dish Italian Restaurant style – simmer the sauce and cook the pasta as you normally would. When you drain the pasta, reserve about 1/4 cup of the pasta water. Once drained, add the pasta directly to the pan where the sauce is simmering. Continue to cook on extremely low heat, coating the pasta. Add the reserved water if needed, a very little bit at a time, to get the consistency of a restaurant style pasta dish. 

Following along with healthier options, I decided to take the Cali’flour Original Italian Pizza Crust, which is a great choice for a low-carb cauliflower pizza.  This pizza crust has only 4 simple ingredients and is 180 for the whole crust. (Talk about not feeling bad when you eat the entire thing!)  It is also grain free/gluten free, low carb and low-glycemic. There is so much you can do with this pizza to fit into a healthy lifestyle. You could definitely use this crust to make a traditional pizza with the RAGÚ sauce or go a little outside the box, like this recipe does.  

What You’ll Need: 

1 Cauliflower Pizza Crust (Cali’Flour Pizza Crust – Original Italian) 

Feta Cheese – Crumbled (1 cup) 

2 Cups Arugula – Washed/Rinsed

Basil Pesto (3 Tbsp) 

Start by cooking the Cali’Flour Pizza Crust according to the package directions. It doesn’t need much cook-time, and be sure to watch it carefully. Once done, remove and allow to cool slightly. This is the kind of thing you want to prepare right before you bring it to the table, so timing is everything. Spread the basil pesto on  the crust. Use as little or as much as you  like. 

Spread the arugula around the crust, on top of the Pesto. Finish off with feta cheese. Again, use as little or as much as you like of both these ingredients.  Serve right away, so it’s warm! 

This EASY and quick pizza goes so nicely with the pasta. And it’s ready in no-time, with minimal work. My kids had no idea this pasta was any different than regular pasta. And that’s a win – because I feel better about giving it to my kids.
