During the summer, we like to make use of the grill as much as possible. Eating outdoors and cooking outside is just part of what makes summer so great. I also love that cooking becomes more “shared” since my husband does the grilling. While we love typical grilled foods, we do like to keep variety with dinner. I’m fortunate that 2 out of 3 of my kids are pretty good eaters – they’ll try and eat new things quite eagerly.
One thing we love to do is grill a favorite meat and serve it on a bed of our favorite salad. You can’t imagine how easy this meal is to pull together. Today, I’m sharing a Hatfield Grilled Pork Tenderloin set on a bed of Arugula, Red Grape and Parmesan Salad – drizzled with a Balsamic Vinaigrette.
This meal is great for outdoor dining – on those warm evenings when you just want an easy meal.
We use Hatfield Dry Rub Seasoned Tuscan Herb Tenderloin to help keep things simple in the preparation department! Hatfield products are simple, perfect for summer grilling and entertaining – allowing you to get creative with your recipes instead of spending a ton of time prepping.
Hatfield Grilled Pork Tenderloin with Arugula, Red Grape & Parmesan Salad
Ingredients:
Hatfield Dry Rub Seasoned Tuscan Herb (but you can use any variety you like)
6 oz. Baby Arugula (Rinsed)
1 cup Red Seedless Grapes (Halved)
½ cup Shaved Parmesan Cheese
Balsamic Vinaigrette (for drizzling)
To Prepare:
- Open the Hatfield Dry Rub Seasoned Tuscan Herb. Place on hot grill and grill on medium heat for 20-25 minutes (lid closed) We flipped once mid-cooking.
- While meat is grilling, combine Arugula, Grapes and Parmesan Cheese and plate each salad.
- When meat is done, allow to sit for 5-10 minutes before slicing. Slice and place on top of each bed of salad.
- Drizzle as desired with Balsamic Vinaigrette.
