Thank you to Stemilt Growers for sending me a sample of Skylar Rae cherries to try out in a recipe. All thoughts are my own.
Salads are the best summertime meal solutions. They go along great with grill foods and are refreshing, light and crisp on a hot day. This Cherry Pistachio Arugula Salad is not made with ordinary cherries. I used Skylar Rae® brand Tip Top cherries. They are the sweetest cherry you’ll ever eat! Exclusive to Stemilt Growers, this cherry resembles the Rainier cherry, but it is actually different. It’s firmer and much sweeter than anything you’ve ever tried.
The story behind this cherry is fascinating — it was found “growing by chance in 2004 by the Toftness family at their Tip Top Orchards in Wenatchee, WA. Usually these chance discoveries can’t be replicated and grown commercially, but this is no ordinary cherry. The brand name of this special cherry was chosen to honor Skylar Rae Toftness, the late daughter of Troy and Kim Toftness.” See, a truly special cherry!
Skylar Rae® cherries have an orange-red complexion, incredible firmness, and high sugars for a candy-like flavor.
Their addition to this salad is incredible. The pairing of the distinct flavor of arugula, with pistachio and sharp, freshly shaved parmesan with the sweet and firm cherry makes for a delicious salad. I drizzled with a little balsamic vinaigrette and it was perfect.

- 1 cup Skylar Rae Cherries – pitted and halved
- 1 package of rinsed/dried Baby Arugula
- 1/2 cup chopped pistachios
- 1/2 cup fresh shaved parmesan
- Balsamic Vinaigrette
- Place Arugula into large bowl
- Add Cherries, Pistachios – gently combine
- Add parmesan – gently mix
- Plate and drizzle with Balsamic Vinaigrette
