Our family has been busy. I feel like it has been every other night. Whether it’s racing off to the baseball field, rushing to Tae Kwon Do or scooting off to an after-school playdate or birthday party, it seems like we are always on the go. To take the pressure off dinner I always make sure I have some easy, but balanced, dinner tricks up my sleeve.

An easy prep meal – both Stouffer’s Macaroni & Cheese and broccoli.
Roasted Broccoli with Lemon & Garlic
2 Tbsp Olive Oil
1 Tbsp Minced Garlic
1/4 teaspoon sea salt
1/7 teaspoon fresh ground black pepper
2 cups broccoli spears
Lemon Juice (for drizzling)
Preheat the oven to 400 degrees. Combine the oil, salt & pepper, garlic and broccoli in a large bowl and mix to coat well. Transfer to a baking pan and bake for 15 minutes until broccoli is tender and beginning to brown. Drizzle lemon juice over the broccoli. Enjoy!
