Roasted Broccoli with Lemon & Garlic

Balance your dinner plate with this recipe for a simple garlic & lemon roasted broccoli. Once you try it, you’ll agree that is the best way you’ve ever eaten broccoli. Even my kids love this one! 

Our family has been busy. I feel like it has been every other night. Whether it’s racing off to the baseball field, rushing to Tae Kwon Do or scooting off to an after-school playdate or birthday party, it seems like we are always on the go. To take the pressure off dinner I always make sure I have some easy, but balanced, dinner tricks up my sleeve. 

Stouffer’s Family Size Macaroni & Cheese is often a go-to for dinner. In under 20 minutes, I can have a prep-free, delicious, hot tray of Macaroni & Cheese that serves 5! Paired with my recipe for Roasted Broccoli, and you’ve got a dinner win.  

Stouffer’s Mac & Cheese recipe includes real, simple ingredients, like freshly made pasta, cheddar cheese, milk and butter. It’s no wonder that it’s a favorite of my kids’ and husband — and so many other people, too!  For more than 90 years Stouffer’s has served recipes made with high-quality ingredients and the same love the Stouffer family put into every recipe at the family restaurants decades ago. The Stouffer’s brand started in a small Cleveland restaurant, which later became a chain of restaurants due to the first location’s enormous success. Recognizing the quality of the meals, customers began asking for take-away versions of their favorites, so the Stouffer family began freezing and selling their popular items.

No matter what you serve, it’s always important to Balance Your plate. Research shows that Americans are only meeting MyPlate recommendations for vegetables, fruit, proteins, dairy and grains seven days out of 365. To build a balanced meal, use frozen prepared foods as your base and pair with an easy-to-make side dish made of fruits, vegetables, whole grains and/or low-fat dairy.

To balance our dinner plate, I love adding this simple recipe for a Roasted Broccoli with Lemon & Garlic. It’s simple, crisp and my kids love it. They ask for seconds of this broccoli.

An easy prep meal – both Stouffer’s Macaroni & Cheese and broccoli.

Roasted Broccoli with Lemon & Garlic 

2 Tbsp Olive Oil 

1 Tbsp Minced Garlic 

1/4 teaspoon sea salt 

1/7 teaspoon fresh ground black pepper 

2 cups broccoli spears

Lemon Juice (for drizzling) 

Preheat the oven to 400 degrees. Combine the oil, salt & pepper, garlic and broccoli in a large bowl and mix to coat well.  Transfer to a baking pan and bake for 15 minutes until broccoli is tender and beginning to brown. Drizzle lemon juice over the broccoli. Enjoy!
