Coffee and Cream Popsicles

What better way to take your coffee this summer than as a popsicle … yes, I said popsicle! These coffee and cream popsicles are a great way to enjoy a cup of coffee summer-style. And they’re so easy to make! 

I don’t know about you, but I must (MUST) have my coffee in the morning each day. Sometimes in the afternoon, too. With three little kids, I’m still sleep deprived and coffee is what keeps me going. I usually get to work in the morning with a hot cup of coffee…with creamer, always with creamer.

I love using Dunkin’ Donuts® Creamers as a way to add a variety of flavors to my daily cup. And while I like changing it up every now and then, I’m pretty traditional with my AM, hot cup of coffee so I typically choose Dunkin’ Donuts® Extra Extra Creamer. It’s made with real sugar, milk and cream for a wonderfully rich and smooth taste. 

A good cup of coffee is the way for me to kickstart my day! But as we head into some warmer weather here in the northeast, the afternoons can be hot. I usually turn to iced coffee in the afternoon to help me keep up with my kids’ endless energy levels!

And while iced coffee is always a good idea, it’s fun to do something different with my favorite cold brew coffee. I made these Coffee and Cream popsicles as a fun, interesting way to enjoy an iced coffee and Dunkin’ Donuts® Vanilla Creamer.

 I chose to use the Vanilla variety because of it’s smooth taste and rich vanilla flavor. I knew the taste of the creamer would be a nice compliment to my favorite cold brew coffee. 

I like to create the popiscles in layers, but you can certainly mix your cold brew and creamer of choice together and pour into the popsicle mold.  To achieve layers, be sure your first layer (creamer) has time to harden in the freezer, but not too hard in that you won’t be able to put your sticks in. You want the creamer, at the top of the popsicle, to also be firm enough so that the second layer doesn’t break through. 

I actually did three layers – Dunkin’ Donuts® Creamer Vanilla, ice coffee light with cream, and finally iced coffee with  a little cream!   Serve them up for a crowd or grab one and enjoy a coffee break – summer-style!

Coffee and Cream Popsicles

Total time: 25 mins
Serves: 6
Ingredients
  • Dunkin’ Donuts® Vanilla Creamer
  • Favorite Cold Brew Iced Coffee (Chilled)
  • Popsicle Moulds
Instructions
  1. Start with a layer of the creamer. Pour into the mold, filling 1/3.
  2. Return to freezer for 20 minutes – set a timer if need be.
  3. Ensure the cream layer is firm before adding the next layer.
  4. To make the next layer, add creamer to cold brew coffee to desired lightness and add to mold on top of creamer layer.
  5. Repeat process with a final layer of coffee and cream, this one slighlty lighter or darker.
  6. Place stick into popsicle and freeze overnight.
  7. Use a warm towel to loosen the popsicles before removing.
