I’ll admit it. I don’t like when I have dinner duty. I’m all too tempted to get takeout to help satisfy the picky eaters that are our children. One wants breakfast for lunch, one doesn’t like any veggies at all and the other will eat most foods but only in certain combinations. What is a non-cooking Dad supposed to do? I don’t know how my wife does it every single day. She offered a suggestion to get creative and make something that the kids all love while keeping it simple with better-for-you ingredients.
I decided to find some inspiration based on what I had on hand in the pantry — using a little of something that everyone would love. And so, Pizza Wafflewiches were born.
I honestly was a little surprised how intrigued my kids were by these. Just the combination of pizza + waffles. I heard no complaining. Eggo products can be so versatile! They’re not just for breakfast. In fact, the possibilities are endless for getting creative in the kitchen for lunch, dinner, snack time or whenever.
To make our Pizza Wafflewiches, we started with Eggo Homestyle Waffles and added mozzarella cheese, basil, and pepperoni. When finished dipped them in a marinara sauce. You can omit or add any number of things – like peppers, mushrooms or whatever your favorite pizza topping might be. (see the full recipe below)

I really appreciate that Eggo has a new formulation that is free from artificials. All Eggo products are now made with colors and flavors from natural sources. You can look for the packaging with the green banner to give the new formulation a try.

Recipe: Pizza Wafflewiches
What You’ll Need:
Choice of Eggo Waffles (Eggo Homestyle Waffles work nicely!) – 2 per “pizza” sandwich
2 slices of mozzarella
1 basil leaf – chopped
pepperoni
1-2 cups of Marinara Sauce (warmed) for dipping
TIP: Get creative with your ingredients. Some other ideas might include mushrooms, peppers, sausage or try different cheeses and make it a taco inspired pizza with peppers, black beans and corn. Yum!
To Make:
Heat your Panini press.
Assemble pizza by layering ingredients on one waffle and topping with the other.
Keep your marinara for dipping – as it does tend to soak through if put directly onto the waffles.
Heat in press until golden/crispy on the outside and the cheese has melted.
Slice and serve with warm dipping sauce.
