Can you believe Thanksgiving is only weeks away? It feels like it was just the summer! As we head closer to Thanksgiving I’m really feeling the pinch this year. The fall has been crazy busy and I know the holidays will bring an added element of rush to things. That’s why, this year, I’m setting my menu early for Thanksgiving Dinner and I’m planning to prepare a few dishes ahead of time. With so much work put into the day, I want to be able to enjoy the time with family and friends, too.
Here’s what I’m preparing this year, which will be displayed for guests in our dining room!

and for dessert – obligatory Pumpkin and Apple Pies
I’m making the Brussel Sprouts and Butternut Squash ahead of time so that I can focus on my turkey and carrots the day of. Easy, right?
I also pre-prepared a cranberry goat cheese ball crusted with pistachio. This is perfect for spreading on flatbread. It’s nice to be able to quickly have things ready for your guests the day of!

Recipe
- 2 oz. diced pancetta
- 1 lb brussel sprouts – remove outer leaves and stem
- 1 tbsp extra virgin olive oil
- garlic – minced
- salt and pepper
- Cut brussel sprouts in half – after trimming the outer leaves and stem.
- In a saute pan, sauté pancetta on medium-low heat and pancetta becomes golden, about 5 minutes.
- Add olive oil and garlic and sauté
- Add shredded brussels sprouts, salt and pepper to taste and sauté on medium-low heat for about 4-5 minutes until tender.
- Allow dish to cool and place in Rubbermaid Brilliance Container to reheat for Thanksgiving.
- I like to reheat this dish in the pan.
