Pineapple Coconut Cream-tini

Sure, the leaves may be turning and the holidays approaching, but I’ve still got summer flavors on  my mind. Maybe it’s a longing for the lazy days of summer now that I’m in the hustle and bustle of fall with even busier months ahead. I’ve been craving some of my favorite summer combinations, like Coconut, Pineapple…Lime. And why not? Everyone loves to be transported to when they take a sip of this Pineapple Coconut Cream-tini.

It’s a super easy drink to mix up and serve. 

ingredients

 

Recipe

  • 1 1/2 ounces SOBIESKI® 100% Pure Rye Vodka
  • 1 ounce coconut rum
  • 1/2 ounce cream of coconut
  • 1 ounce DOLE® Canned 100% Pineapple Juice
  • Pineapple wedges, lime and coconut flakes for garnish on a skewer. 

 

 

 

 

 

 

Directions:

Pour contents into a shaker filled with ice. Shake and pour into Martini glasses. Garnish with Pineapple Lime Skewers that have been sugared and rolled in shredded coconut.

With the holidays approaching, I was inspired to create some DIY Chalkboard Trays to serve drinks on. When you entertain, it’s always fun to have a few signature drinks that you can make and leave out for guests to grab as they arrive. These chalkboard drink trays make it easy to label the drinks.

I used gold chargers to create these, since I wanted to leave the rim around the outside in gold. I knew it would be a pretty combination I can use over and over again. You can find these inexpensive gold chargers (they also come in silver, red, blue and green) at most discount or craft stores. Most of the time they are under $2.00, making this a budget DIY.

In addition, you’ll just need a foam brush and black chalkboard paint. Chalkboard paint is so simple to use. Paint in one direction for your first coat, and then in the opposite direction for the second coat, once the first has fully dried. You get good coverage this way!

Make sure your trays have been able to FULLY dry overnight before you write or wipe on them.  Serve your drinks on the tray with a label for the drink. Easy!
