Energy Boosting Coconut Orange Popsicles

It may be officially autumn, but here in the New Jersey, mother nature didn’t get the memo. It’s been hot, humid and unseasonably warm. While I might be dreaming of all things pumpkin and hayrides, this warm weather has me craving my favorite summer treats. Homemade popsicles are my favorite, so why not put them to work as both a yummy treat AND a good-for-you boost.  Emergen-C as the main ingredient gives these popsicles an amazing amount of Vitamin C, along with other essential nutrients, 7 B Vitamins,  Antioxidants and Electrolytes.

These supercharged ingredients do so much for you – making a simple popsicle and energy boosting, immune supporting treat! *

Immune Support

1,000 mg Vitamin C plus other antioxidants zinc and manganese support your immune system. 

Energy

7 B Vitamins including B1, B2, B3, B5, B6, B9 and B12 enhance energy naturally without caffeine.

Electrolytes

Great for post-workout, replace key electrolytes lost through perspiration. 

The Super Orange Flavor  is delicious and got me thinking about orange creamsicles! This popsicle recipe is inspired by them. 

You’ll need:

4-6 packets of Emergen-C – Super Orange – you can find at Walmart 

 1 cup Coconut Milk, Unsweetened

Shredded Coconut 

4 oz of water per packet of Emergen-C

1 tsp of Orange Rind 

3 TBSP Fresh Squeezed Orange Juice

Directions: 

Start by mixing Emergen-C with water. Use the minimal amount of water per packet to get the boldest flavor. 

Mix Coconut Milk together well – no seperation or clumping

Combine Coconut Milk with Emergen-C and add Coconut Shreds, Orange Rind and Orange Juice 

Add to popsicle molds and freeze. 

You can adjust the amount of coconut milk for a creamier popsicle. 

*Coconut shreds will try to settle at top. I usually mix when they are almost frozen to help distribute the coconut.

Try these the next time you need an afternoon or morning boost. They are great post-workout, replacing electrolytes, and are so much better for you than reaching for a cup of coffee. And it’s a popsicle…so you feel like you’re eating a treat! Win-win!

    These look delicious. This definitely looks like something I would enjoy post-workout! Great idea to include extra vitamins in the popsicles. What a fun way to make sure you are getting all the nutrients your body needs, especially post-workout! #client
