‘Unfried’ Vegetable Rice

I love preparing this recipe for an “Unfried” Vegetable Rice after we visit the farm market. Fresh vegetables and brown rice are the simple ingredients that make this dish simple and healthy. 

Unfried Vegetable Rice

One of the most important things to me as a mom, is what I feed my children. We shop the farmer’s market, participate in a CSA (Crop Share) in the spring/summer and buy quality meats and seafood.

Trips to the local farm market for our weekly produce and CSA pickup is how I expose my children to locally grown fruits and vegetables, harvested grains as well as local, farm-raised meats.

Farm time = family time. There’s year-round activities, pick your own fruit, vegetables and flowers, too! For the kids, seasonal activities, hay rides, farm animals and for a treat, farm baked goods and ice cream.  

Best of all, our family dog, Oliver is welcome too. He loves it at the farm – being outdoors, seeing new people and enjoying time with us.

On this particular day he was a bit obsessed with the goats so we needed to keep him out of the way a bit – but he enjoyed the sun and people watching. After shopping the farm market, I decided to make a vegetable “unfried” rice dish loaded with my picks from the farm that day. It’s super easy to make — and keeps everyone satisfied.

I picked up fresh green beans, carrots, broccoli, pepper and scallions to add to my “faux” fried rice.

Ingredients Unfried Vegetable Rice

Making this dish is beyond easy. You’ll need to wash, prep and chop your veggies and then cook your preferred rice – I like to use brown rice.  The ingredients are cooked in a wok or pan with a small amount sesame oil, garlic, ginger and soy sauce. The preparation is more steaming than frying – making it much healthier.

It’s great for dinner, lunch, leftovers, the school lunch box, whenever — and is a great alternative to takeout.

    Ha, I laughed out loud at Oliver provoking the goats- We take our pup to the pick your own farm too, and have to keep her in a doggy stroller because she gets so excited. At least we can haul some of our finds back in the stroller too 🙂 #client

    This unfried rice looks delish, and I love the new dish line by Rachael Ray too! It’s our dog’s favorite yet! I will have to make this recipe for my family, they are huge fans of stir-fry dishes! 🙂
