Entertaining during the holidays is all about good company and good food. Anytime you can make the food easier to prepare and better for you, that’s a bonus. When I entertain, I like to make comfort foods that everyone is familiar with – but with a twist or two. This year, one of my favorite side dishes for our family holiday dinner will be a rice casserole. It goes well with any of the meats that are being prepared and because it’s a cheesy rice, everyone loves it.
Broccoli, Mushroom & Cheddar Rice Casserole
To make this recipe, you’ll need to start with your favorite rice – you can choose any kind. The key is to pre-cook it, which you can do ahead of time.
The other main ingredients include Chobani® Non-Fat Plain Greek Yogurt, which I like to purchase in the 32 oz. container, Shredded White Cheddar Cheese, Mushrooms and Onion. I was able to pick up everything on a trip to Walmart.
What makes this dish so yummy is the creaminess – and the Chobani® Greek Yogurt helps make this possible! I substituted Chobani® for butter and heavy cream making this recipe lighter. But it’s the other things that the Chobani® does for this recipe that makes it so impressive.

The steps in this recipe are simple and easy to follow. It’s the perfect side-dish for the holiday season, since it goes so well with everything!
Recipe : Broccoli, Mushroom & Gruyere Rice Casserole
3 Cups Rice – Cooked
1 cup Shredded Cheddar Cheese – I went with Sharp White
1 cup of NonFat Plain Yogurt
1/2 cup chopped Mushrooms – Fresh
1 cup of Chopped Broccoli – Fresh or Frozen
Additional Ingredients :
1 tsp garlic powder
1/2 c. chicken stock
1/4 c. chopped onion
salt and pepper to taste
Preheat oven to 420.
Spray a baking dish with non-stick spray.
In a separate bowl, mix together Chobani® yogurt, and half the cheese.
Add mushrooms, broccoli and onion.
Gently mix to combine. Add salt and pepper to taste, garlic powder and rice. Finally, add chicken stock and mix well.
Spread mixture into baking dish and top with remaining cheese.
Bake for 20 minutes until golden brown & serve.
