I love everything that fall brings — cooler weather, leaves, pumpkins and, of course, college football. When we’re not attending home games for our favorite team, we’re homegating with friends and family. Truth be told, I’m not the best at following a football game. But I am a fan of how football brings people together! A good game, good people, and good food. To me, it’s the best!
Our guests seem to love Pulled Pork Sandwiches, so I thought I’d change it up by adding some cheese and creating a Pulled Pork Grilled Cheese Sandwich. Cheese seems to make anything better – and this sandwich is the perfect example!
You’ll want to grab some extra napkins for this one. It is the perfect marriage between two favorites! What makes this pulled pork grilled cheese even more special is the pork. It is slow-cooked and marinated with Dr Pepper. This gives it such an amazing and distinctive taste. If you haven’t tried this – you don’t know what you’re missing.
I recommend making your pulled pork ahead of time so that on game day, you’ll be able to quickly prepare your sandwiches. I like to use a Round Top Roast and prepare it in the slowcooker the day before. You’ll add a can of Dr Pepper during the cooking – which gives the meat incredible flavor. Barbecue sauce is added for the last part of cooking and then the very tender meat is shredded.
You can keep the meat warm until you’re ready to prepare your sandwiches or refrigerate and reheat when ready. The sandwiches are prepared just like any other grilled cheese with the addition of the meat. I made these with an Italian bread, but you could use your favorite.
These simple sandwiches will make a big impact without a lot of work! Serve them with ice cold drinks, like these slim cans of Dr Pepper that I stocked up on at Target! - ——Pulled Pork———
- 1 pork shoulder roast
- salt, pepper, garlic powder
- 1 can Dr Pepper
- ¾ c. of your favorite BBQ Sauce
- Bread of Choice (Italian)
- Cheese of Choice – Sliced Thin. I used Provolone
- Rub the outside of the roast with salt, pepper and garlic powder.
- Add the roast to your slow cooker and pour in Dr Pepper
- Cook on high for 4-5 hours or low for 7-8 hours
- Meat should very tender – use 2 forks to shred the meat.
- Add BBQ sauce and cook 15-20 minutes more.
- Spread butter onto one side of each slice of bread. T
- op unbuttered side with the meat and slices of cheese.
- Heat skillet or griddle and cook each sandwich for 5-6 minutes, turning once.
- Sandwich should be light golden brown & cheese melted.
