Despite the weather beginning to get chilly, I still enjoy iced coffee. For me, iced coffee is not just a warm-weather thing- but a year-round delicious way to enjoy coffee. Fortunately, I don’t have to endure the long lines of the coffeehouse (which is never a good idea with my kids anyway). Did you know you can do more with iced coffee than just pour it over ice? There are so many awesome recipes that I make with it, since it’s always in my fridge. One of my favorite things to make is iced coffee pudding. Today, I’m sharing a Creamy Caramel Coconut Pudding made with International Delight Iced Coffee – Vanilla.
Aside from being absolutely delicious, it’s SO simple to make. You only need a few things to create this yummy dessert that whips up in minutes!
What you’ll need:
Instant Pudding Mix (1 box) Coconut Flavor
1 cup International Delight Iced Coffee – Vanilla
3/4 cup milk (I used 1%)
Caramel Candy – for melting and a little embellishment on your pudding!
16 oz whipped topping of your choice
To make this easy recipe, all you have to do is combine your box of pudding with the whipped topping. Stir to combine.
Then mix in milk and iced coffee. Whisk well to get out any lumps.
Pour mixture into serving bowls or dishes and then refrigerate for 15 minutes to set. Next, you’ll melt caramel candies in a microwave safe bowl in 10 second intervals – stirring as necessary. Finally, drizzle caramel over the pudding. And done!
It is seriously an easy, decadent and delicious dessert. As we approach the holidays, it’s something that can be easily made when those surprise guests drop by. The creamy coconut flavor really goes well with the hint of the vanilla coffee.
