August isn’t even here yet, but there’s no doubt about it…the count down for back-to-school has begun. Making sure we check everything off those school supply lists is only one way we’re preparing. I’m also stocking up on some meal ideas, recipes and purchases to help me transition back to lunch and dinner prep. I’m thinking about quick and easy weeknight meals, like this Shortcut Minestrone Soup. It’s a simple meal to prepare, and you can make a lot at once. Campbell’s has this recipe (and more) covered with big savings and easy meals from seven great products with coupon offers. And just in time for back-to-school.

This recipe was made with just a few ingredients!  After doing some school supply shopping, we picked up Prego® Italian Sauce – Chunky Garden Combo and Swanson® Chicken Broth – two of those ingredients.

Easy Weeknight Meal

Chopped carrots, celery and minced garlic, some EVOO and the chicken broth form the base for this soup.

After simmering the vegetables in the chicken broth, the pasta sauce, pasta and beans are added to make a hearty meal that will make everyone happy.

You can adjust the consistency with the chicken broth,  adding more if you want more of a soup consistency and less if you like a stew consistency. The way I have written the recipe below creates a bit more of a “stoup” – a halfway between a soup and stew. My kids just seem to like this best!

You can also change the flavor of your soup by which Prego® variety you choose. While shopping at Walmart, I decided on the Chunky Garden Combo.  I felt that the fresh garden flavor would compliment the soup well. There are so many varieties and all of them have the perfect balance of sweet and savory Italian flavor, which work well with this recipe.

We also took advantage of these savings and purchased Pace® Picante Sauce and SpaghettiOs®. The picante sauce I plan on using to create easy crockpot chicken fajitas and the SpaghettiOs® are a great, quick dinner for my twins on nights where there is just no time for cooking.

Serves: 6-8 servings
This shortcut minestrone is made with Prego Pasta Sauce – a great shortcut to a delicious, easy weeknight meal. .
Ingredients
  • 1 Jar Prego Italian Sauce – Chunky Garden Combo (any variety)
  • Swanson’s Chicken Broth – 1 can
  • 1 cup white beans – drained/rinsed from can
  • 1 cup red kidney beans – drained / rinsed from can
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 box pasta – shells or ditalini works best
  • 2 cloves of garlic minced
  • EVOO 1tbsp
Instructions
  1. Boil water – add in pasta — then
  2. In a large saucepan add 1 tbsp of EVOO
  3. Add garlic, allow to cook until fragrant.
  4. Add in carrots, celery – cook until soft – usually 10 minutes
  5. Remove from heat and allow to cool slightly.
  6. Add in entire jar of pasta sauce, return to heat.
  7. Simmer 5 minutes.
  8. Add in cooked pasta.
  9. Add in rinsed/drained beans.
  10. Allow to simmer another 5 mintues. Serve!

    I love making minestrone soup, but haven’t thought to use Prego sauces in my recipe. Genius! I’m looking forward to making this once the weather cools a bit and we head back to school. #client
