Sweet Corn Bruschetta with Sage & Garlic

Sweet-Corn-Bruschetta

With the weather warming up, there’s more dinner on the grill, entertaining on the patio. The perfect way to add sweetness to your meals that everyone will love is with Sunshine Sweet Corn from Florida. Whether you add it to a salad, eat it on the cob, a salsa or even as a bruschetta (see below!!), it’s sure to be the perfect addition to your meal.

Sunshine Sweet Corn from Florida is in season now so you can look for it at your local grocer –it’s your best guarantee for sweet tasting corn in April & May. Not only is it delicious, it’s fun for the whole family. Just look at these little helpers I had husking this Sunshine Sweet Corn!

One thing I love to make when we’re entertaining is bruschetta. So why not change it up a bit with a sweet creamed corn bruschetta with a touch of sage & garlic. It’s amazing on crispy, toasty warm french or italian bread. Best of all, it’s SUPER easy.

Sweet Corn Bruschetta with Sage & Garlic

Ingredients

1 Loaf of Italian or French Bread

Olive Oil, Salt & Pepper

Corn removed from 2 cobs

2 Cloves Garlic – Minced

5-7 Fresh Sage Leaves – Rinsed & Chopped

1/2 cup heavy cream

Sweet-Corn-Bruschetta-Ingredients

Directions:

To start, you’ll need a French or Italian loaf of bread – any bread will do. You’ll want to slice it thin, and lightly brush olive oil and sprinkle salt and pepper on one side. Then lightly toast in the oven at 300 – just about 5-10 minutes will do.

After husking your corn, rinse and remove any ‘strings’ and cut the corn from the cob. Put aside in a seperate bowl. Then you’ll add 1 tbsp of butter to a skillet and allow to melt and brown slightly. Add in minced garlic until it becomes aromatic and slightly browned. Next, you’ll add in fresh chopped sage – allow to cook 3-4 minutes until aromatic. Add in your corn and allow to simmer for 7-10 minutes. Your final step is to add in heavy cream and continue to simmer for an addition 2-3 minutes.

Finally, top the bread, fresh from oven with creamy corn mixture. Serve right away & enjoy!
