Healthy No-Bake Cocoa Bites with bare Coconut Chips

Part of the challenge of eating healthier is finding snacks that both satisfying and good-for-you. I was happy that the good people at bare Snacks offered to send me some samples Crunchy Coconut Chips to try out and share my thoughts about.  They also asked me to share a recipe with 5 or less ingredients using the Coconut Chips.

Right off the bat, I’ll tell you that these Crunchy Coconut Chips are a great snack all on their own. With varieties like Show Me the Honey, Simply Toasted, Chocolate Bliss (my fave!) and Sweet n’ Heat, you’ll agree that you’ve never tasted coconut like this before.

bare Snacks Coconut Chips are:

  • 100% Natural
  • Baked, never fried
  • Free from preservatives
  • Gluten free
  • Cholesterol-Free
  • With 0g trans fats
  • A good source of dietary fiber

I decided to add my coconut chips to a favorite No-Bake Cocoa Bite recipe – to give it a crunchy, new taste.

No bake cocoa bites with bare Snacks

These cocoa bites are made from organic cocoa powder, natural peanut butter, flax seed meal and agave nectar – then they are rolled in your choice of the bare Coconut Chips.

Another variation would be to add oatmeal for a more ‘hearty’ bite.

These are delicious, store well and give you a sweet, chocolate crunchy treat without the guilt.

No-Bake Cocoa Bites Rolled in Crunchy Coconut

Ingredients

1/2 c. natural peanut butter

1/4 c. cocoa powder

1/4 c. flax seed meal

1/4 c. agave nectar

Directions

First combine dry ingredients, then add in agave nectar. Mix well to combine until the mixture forms a dough. Roll into 1 inch sized balls and roll each in bare Snacks Coconut Chips of your choice. 

Store in an airtight container – Enjoy! 

Tip: If your dough will not form into balls, refrigerate for 30 minutes first.
