If you’re looking for a fun snack – one that combines a little bit of all your favorites, then this feel-good treat is for you. These Rice Krispies Treats Ice Cream Sandwiches combine some of my most favorite things – Rice Krispies Treats, M&M’s, Marshmallows and ice cream.  Combine together and you’ve got the perfect afternoon treat. But they look so pretty, too – that you may be inclined to make & share them, too!

To get started, I purchased prepackaged Rice Krispies Treats. I shopped for them and all my ingredients at Walmart.

Start by gathering your ingredients and unwrapping those delicious Rice Krispies Treats. You’ll need one treat per sandwich you want to make. The best thing about these is that you can make just one or a whole bunch at at time.

With spring arriving, I chose the spring colored M&M’s plain – but you could use any color or variety you like. I could see changing the colors of the M&M’s by season, too!  JET-PUFFED Miniature Marshmallows help provide a great topping.  Choose any variety or flavor of ice -cream that you like, but I opted to purchase mine in a paper half-gallon box. You’ll see why this makes it easier below.

Carefully cut each treat down the middle. Have a tray handy that will fit into your freezer. Lay each pair on the tray – the top and bottom of your ice cream sandwich.

Next, remove the paper from the ice cream and cut perfect square slices to the desired thickness. This makes it so easy to stack your sandwiches. The more frozen the ice cream, the better. Place ice cream square on each bottom and assemble. Place in freezer for 15-20 minutes.

Meanwhile, melt butter in a saucepan and add the JET-PUFFED Miniature Marshmallows to create the topping.  Remove the treats from the freezer and simply top each a thin layer of the melted marshmallow.

Line up M&M’s to cover the top and return to freezer for another 15-20 minutes.  Finally, drizzle melted white and dark chocolate over each sandwich. You can store in a container or wrap individually in parchment paper.

And there you have it – an easy, fun treat in no time!
