College basketball is big in our house. So is good game time food. While my husband and I may disagree on the order of importance, we both agree that fries make the best game time grub. I don’t think I could ever get tired of fries, but sometimes it is fun to change up the old ketchup routine and swap in something different – like this Creamy Basil Dip.
To be honest, this dip started out as a sauce in a chicken dish I had made. As I was preparing the recipe, I couldn’t stop dipping things in the creamy basil sauce. It went so well with everything, which led to thoughts about what else it would go great with. When I paired it with potatoes, it was perfection. Naturally, fries were the next step. With a couple adjustments, this dip was born. To start, make sure you’re working with great fries. We love Alexia Smart Classics Crinkle Cut Fries and Sweet Potato Fries that we purchase at Walmart. They’re easy to stock up on and prepare so you’ve always got a great game time food on hand. For the dip, I chose light sour cream and greek yogurt to help keep things on the lighter side. Added to that are fresh basil, lemon juice, salt, pepper, minced garlic and olive oil. The dip mixes up fast. Using a mini processor, I start by chopping the basil and garlic and all other ingredients, but the sour cream and yogurt. (You can see the full recipe below) Once combined, the sour cream and yogurt are added until well combined. This is such a quick dip that packs amazing flavor. It tastes great alone, but with the fries it is delicious! For a fun way to serve fries at your next gathering, try using small pails for either your fries, the dip or both!
Creamy Basil Dip
2 cups fresh basil 1/2 cup light sour cream 1/2 cup plain greek yogurt 1/8 cup lemon juice – fresh squeezed 1 clove garlic – minced 1 tsp salt 1/2 tsp pepper 1-2 tsp Extra Virgin Olive Oil
1. Add basil, olive oil, garlic, salt, pepper and lemon juice into mini-prep processor or blender. Process on medium speed until basil is finely chopped and other ingredients are well-blended. 2. Add in sour cream and greek yogurt. Process on low speed until combined. Refrigerate until ready to serve.
