The frosting is the best part – at least that’s what my five year old tells me. And I couldn’t agree more. I wanted to try out a new frosting – something fun! – for this Valentine’s Day! This pink champagne frosting is so delicious and perfect! You could use it for cakes, cupcakes, or cookies. I tried it out and paired it with a vanilla & strawberry cupcake. Yum!
Pink Champagne Frosting
½ cup butter, softened
3 1/2 cups of powdered sugar
1 tsp vanilla extract
¼ cup pink champagne –
(I personally like Pommery Pink Pop Champagne Rosé)
3-5 drops of red food coloring
Sprinkles for topping cupcakes
Directions:
In a large bowl, mix together sugar and the butter – until fluffy. Add eggs and vanilla and mix well.
In a seperate bowl, combine salt, flour and baking soda.
Finally, in another bowl, add gree yogurt, champagne and the food coloring. Add less and you have a lighter pink – more and you have darker pink.
Slowly add the champagne mix and flour mixture into egg mixture.
Now you can top cupcakes, use on a cake, as a cookie topping and more!
