We all encounter people in our lives who, for various reasons, could use a little ‘pick-me-up.’ I have such a person in my life right now. While I can’t solve what she is going through, the gift of tea-time can soothe and help someone to relax and get their mind off things. Nothing can lift the spirit quite like good friendship, conversation and a great cup of Bigelow tea. Of course, tea is even better when paired with a delicious sweet – like Chamomile Scones and a Citrus Butter.
With many people opting for natural sweeteners, I’m going to share a recipe for Chamomile Scones made with Truvia and a delicious Citrus Butter Spread. Paired with Bigelow Tea, you can create an easy gift of tea, friendship and conversation.
Chamomile Scones
The tea, added directly from a Bigelow Tea bag, gives these scones a lovely, subtle flavor.
The Truvia Baking Blend bakes like sugar and adds the perfect amount of sweetness to these tea-time treats.
If you’re not familiar with Truvia, it is a natural sweetener made from Stevia Leaf extract. It comes in several blends so that you can use them in many ways. The sweetener packets help me make my hot tea perfectly sweet. The baking blend helps reduce calories in some of my favorite recipes.
To make these scones, start by mixing together all of the dry ingredients (flour, baking powder, sea salt, Truvia Baking Blend ) including the contents from 1-2 chamomile tea bags. Add 1 stick of cold butter, which has been cut into small pieces. You can use your hands or a pastry cutter to mix to get a course-crumbs consistency. Add 3/4 cups cold water in and mix, but do not overmix – just enough to make a solid piece of dough. Roll your dough out onto a clean, floured surface and knead gently to form an 8″ round shape. Cut into wedges, place on a cookie sheet and bake at 450 degrees for 10-12 minutes.
Watch them closely. If you like your tops browned, I like to brush each scone with milk mid-way through baking. You can allow to cool or serve warm. Allow to cool fully before packaging for gifting.
Citrus Butter
This easy citrus butter makes a great complimentary gift to deliver with these scones. The steps are so simple and the flavor is amazing. You’ll want 1 stick of butter, softened at room temp, honey and the grated peel of lemon and/or orange.
Mix honey, citrus zest into softened butter and add 1/2 tbsp of honey. Mix to desired consistency. I like mine to be more “whipped.” Tip: You can make so many types of butter this way – adding fruit, sweet or savory ingredients.

The mint is subtle and perfect with the flavors of the scones and citrus. I chose to place all of my packets in a jar that could be displayed.
Finally, a chalk label reads: “A cup of tea is always a good idea.” So, so true.
Package it pretty – add a hand towel, pretty placemat or fresh flowers. I put the citrus butter in a mini jar for easy storing.

- Scones
- ———-
- 2 c. flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 c. Truvia Baking Blend
- 1-2 Bigelow Chamomile Tea Bags – open and remove tea
- 3/4 c. cold water
- 1 stick cold butter – cut into small pieces
- Citrus Butter
- —————-
- 1 tbsp Citrus Zest – lemon, orange or both
- 1 stick butter, softened
- 1/2 tbsp of honey
- Scones
- ———–
- Preheat oven to 450 degrees
- Put dry mix ingredients into a large bowl, including tea
- Add butter and use pastry blender or hands to get to coarse crumbs consistency
- Add water adn mix lightly – do not overmix
- Turn dough onto floured surface and gently knead into 8″ round (about 1/2 inch thick)
- Cut into 8 wedges
- Place wedges on baking sheet
- Bake for 10-12 minutes – watch closely
- Brush tops with milk for browning
- Citrus Butter

- Allow butter to soften.
- Add honey and citrus zest.
- Combine – and mix well to reach desired consistency.
- Store in jar with lid

I have been using natural sweeteners for over a week now. I used to be skeptical about it, but when I finally got to try it, I loved it!
