I’m hosting a tea party/mug swap in a week and nothing goes better with tea than mini sandwiches, and of course, pastries. I thought of all my favorite desserts and decided do some easier, mini versions that would be simple for me to throw together.
One of my most favorite pies is a Coconut Cream Pie and this recipe is a Simple, 3 Ingredient Coconut Cream Pie Bite. They are creamy, filled with the flavor of coconut, with a bit of crunch — perfect for a lovely tea party when you don’t have a lot of time. It’s 3-ingredients to save time – a shortcut to a lovely pastry. I hope you try them & enjoy!
Coconut Cream Pie Bites
INGREDIENTS
1 Package of Rolle Phyllo Dough OR Pre-made Phyllo Cups
1 package of whipped topping (ex: Tru Whip)
1 c. shredded coconut (set aside 1 tbsp for toasting)
Optional 4th ingredient: a few drops of coconut extract
DIRECTIONS
Using small muffin tin, prepare phyllo dough as per package instructions to create cups. If you’re using premade phyllo dough cups, even better!
In a seperate bowl, combine coconut with Tru Whip.
Add optional coconut extract if you want a stronger coconut flavor.
Meanwhile, lightly toast 1 tbsp of coconut in oven at 300 degrees. Will only take a few minutes. Watch carefully. Use this for garnish.
When phyllo cups have cooled completely, spoon Whipped Topping & Coconut mixture into each cup and garnish with toasted coconut.
