Fall = Football in our house, which inevitably leads to snacking. This season, with the help of new Skinnygirl Popcorn, I’ve decided to keep my snacking in check! I’m skipping the chips & dips and instead popping a bag of Skinnygirl Popcorn – for myself and when I have guests over.
I was so excited to see a favorite brand and my favorite snack (popcorn!) come together! Skinnygirl Popcorn comes in great flavors like Butter & Sea Salt and Lime & Salt and does not have any artficial flavors, sweeteners or colors. Added to that, the popcorn has been portioned out into mini-bags, helping me stay on track and feel less guilty when I eat the whole bag. At just 25 calories per cup popped (6 cups per bag), this low calorie popcorn is the perfect snack choice as is and with some additions!
For a recent football sunday, I picked up a box of Lime & Salt and Butter & Sea Salt Skinnygirl Popcorn at Walmart. You can find them right in the snack aisle in the popcorn section.
My goal was to make this popcorn two ways – one spicy and one sweet without compromising the healthy snack status. I made Dark Chocolate Drizzled Popcorn with Coconut & Cranberry to satisfy my sweet-tooth. For the some kick, I made Spicy Chili-Lime Popcorn. Needless to say, everyone loves popcorn, so both of these varieties were a hit with guests. You can get the details on how I made both below!
Dark Chocolate Drizzled Popcorn with Coconut & Cranberry
Okay, it’s quite obvious I just combined all of my favorite things here – popcorn, cococut, chocolate and dried cranberries. But it works and tastes great. I keep it simple, adding just a little of each. I think this gives the popcorn a sweet kick while remaining a smart snack choice.
What You’ll Need:
Skinnygirl Butter & Sea Salt Popcorn
1/2 dark chocolate bar – I choose a 72% cacao organic chocolate
1/ 2 cup dried cranberries
1/3 cup shredded unsweetened coconut
Directions:
Pop Skinnygirl Butter & Sea Salt popcorn according to directions.
Lay out on cookie tray or on silicone baking mat and allow popcorn to cool.
Melt dark chocolate of choice. I like to use a squirt bottle so that I can evenly distribute the chocolate without going overboard. Less is more.
After drizzling chocolate, immediately add coconut and cranberries – sprinkling on top. I like to do this so that some of the coconut and cranberries stick to the popcorn. Allow chocolate to set and serve!
Spicy Chili -Lime Popcorn
This easy mix has some serious kick! By adding more or less of the Chili Pepper, you can control the level of spice. I use the Lime & Salt Skinnygirl Popcorn, but I like adding in a bit of fresh squeezed lime juice to help cool down that chili pepper.
What You’ll Need
Skinnygirl Lime & Salt Popcorn
1 tbsp chili powder
Juice from 1 lime
1/2 tsp of Olive Oil
Directions:
Pop Lime & Salt Popcorn according to directions.
Lay out on cookie sheet or silicone baking mat.
In a small bowl, combine juice from 1 lime with chili powder. I like to add in the olive oil to help it adhere to popcorn better, but this is completely optional!
Drizzle over warm popcorn and mix to coat. Serve & Enjoy!
