There is no easier way to support your child’s school than with things that you’re already doing – like grocery shopping for our families. That’s why I love Labels for Education as a way to help my son’s school earn things that can benefit the kids! I purchase the products that participate with this program for my family and even found some new recipes for great weeknight meals as a result.

Important Stuff First: What is Labels for Education?
This program allows a school community to work with families to earn free things for their school. With over 2,500 participating products, it’s very easy to collect the UPC symbols and beverage caps/labels to help your school earn!
I also love the eLabels for Education program which allows me to use my frequent shopper card to earn points. Talk about easy! Additionally, you can find your participating school online, see their goals and what is on their wishlist. It’s a great way to be involved and the whole family can participate!
My son loves to help clip and count labels off of some of his favorite foods, like Campbell’s Soups, Danimals Yogurts and Pepperidge Farm Goldfish. The best thing is, the labels are on products we already buy all the time – making it an easy way to give back.
The participating brand that we purchase the most of is Campbell’s Soups. My kids love these soups, like the Chicken & Stars! My son is a picky eater, but has always loved soup. It is a great way to get him to eat veggies and a variety of foods without complaint. I also use the soups, like Tomato, Cream of Chicken and Cream of Broccoli to cook with.
I find Campbell’s and my other favorite Labels for Education participating brands at my local grocery store, ShopRite. I always shop from this great Campbell’s display. I love how it’s organized and makes it easy to find what I need.
Campbell’s has an amazing assortment of online recipes available to inspire any type of meal or cuisine. One recipe that I was inspired by to help me create a quick weeknight meal was the Creamy Chicken Quesadillas. I’ve made them as is and they are delicious! But the ease and convenience of the recipe inspired me to get a bit more creative.
Recipe
Creamy Spinach, Bean & Chicken Quesadillas
This easy to prepare recipe will have dinner on the table quickly on a weeknight! The ingredients are simple to gather and include fresh spinach, white beans, chicken and, of course, Campbell’s Cream of Chicken Soup.
Quick Tip: Rotisserie Chicken (that you buy cooked from the supermarket) is a great shortcut for a recipe that calls for chicken. The possibilities are endless! If you go in the evenings, they tend to mark them down and I usually buy two or even three. You can take the meat and freeze for recipes all week! Time saver and budget-saver!
Prep and cooking are easy – one skillet for your filling…
and another for preparing the quesadillas. You can serve with salsa or they are great stand-alone, too!
The perfect, satisfying, and tasty weeknight meal.
- Quesadillas of your Choice (4)
- 3 c. baby spinach – washed and dried
- 1 can Campbell’s Cream of Chicken
- 1 c. small white beans – rinsed and drained
- 1 c. shredded cheddar cheese
- 2 c. chicken shredded or cut into small pieces
- 1/2 c. Pace Picante Salsa
- In a warmed skillet, add chicken soup and 1/2 can of water over medium heat.Stir to combine.
- Add prepared chicken – and combine, cooking for 2-3 minutes.
- Reduce heat to low and Add in white beans and baby spinach. Stir and combine; allow to cook for another 5 minutes until creamy and thick.
- In a seperate non-stick skillet, place and open Quesadilla. Cover half the Quesadilla with the mixture of chicken, spinach, soup and beans.
- Sprinkle with cheddar cheese.
- Fold over one half and heat the Quesadilla on low until each side is brown.
- Cut in half and serve with Pace Salsa.
