I used to be the type that skipped breakfast – not really buying the hype. Coffee used to do just fine. But somewhere between the birth of my now 4 year old son and one year old twins, I realized that it’s true what they say. Breakfast is the most important meal of the day.
I find myself having better energy and eating better the rest of the day when I start out with a healthy breakfast.
This simple and quick breakfast (or even lunch) combines two of my favorites – avocado and good, simple eggs! It’s fast to whip up and leaves you feeling satisfied for hours.
Ingredients for 2 servings:
1 avocado, pitted
topping of choice: italian seasoning, parmesan cheese, or any of your choice – crispy bacon or pancetta. Yum.
Preheat your oven to 400 degrees. This is the temperature that my oven seems to work best at without cooking the avocado too much.
Remove some of the avocado to allow room for egg. Sprinkle avocado with a bit of salt and pepper.
With foil, create a boat for your avocado to sit in. This helps with baking and holding the avocado still once the egg is in. Crack the eggs into the ‘avocado bowl’ and top with salt, pepper and other chosen toppings.
Serve right out of the oven & Enjoy!
