As a mom to three young children, it can truly feel like there is no time left for myself in the day. One way that I do try to get some time for ‘me’ in is during my morning coffee. I always, no matter how busy my to-do list is that day- find the time to just sit and have my coffee. Most days this is alone, but even though it’s fleeting, it’s a great way for me to start my day. Needless to say, a good cup of coffee is critical to all of this.

I knew I could quickly pull something together with the coffee I had chosen, my Coffeemate Peppermint Mocha Creamer and a few little breakfast items. It was a great way to connect – and she, like me, loved the Peppermint!

My four year old is forever asking me to taste my coffee! Since he’s too young for some java, I knew I could make him something simple, easy and with the Peppermint Mocha Creamer from Coffeemate – Peppermint Hot Cocoa.

Easy Peppermint Hot Cocoa with Coffeemate Peppermint Mocha Creamer
The thing that makes this recipe so easy is that you can use any type of hot cocoa you want – from a hot cocoa packet or homemade…it’s up to you.
I make our own Hot Cocoa powder, store and then just add *almost* hot milk.
Hot Cocoa Powder:
3 cups sugar
2 1/2 cups unsweetened cocoa powder
dash of salt
3/4 cup milk (You can use any type of milk)
1/4 cup of Coffeemate Peppermint Mocha Creamer
1/2 tsp Vanilla Extract
Stir together wet ingredients, warm in saucepan or in microwave. Then add 2 rounded tablespoons of hot cocoa powder – stir.
Optional: Top with whipped cream, drizzled chocolate and crushed peppermint. Serve with peppermint stick.
