What’s the best thing you’ve ever eaten? I think a lot of people have that one thing that they’ll never forget eating. Whether it’s something you or someone else made or you had at restaurant. For me, I had an antipasto dish in Rome about 5 years ago that I doubt I can ever fully recreate. It was breaded mozzerella on a bed of tomato ragu, topped with fresh tomato and greens. It was delicious and probably the most delicious thing I’ve ever eaten. Since I love a good shortcut, I wanted to try and recreate this dish using a simple hack – mozzarella sticks! I started with my favorite mozzarella sticks from Farm Rich. Farm Rich is also running a recipe contest now for snack hacks just like this – more below!
I knew the quality of Farm Rich would be up to this appetizer. I cut out the meat for the ragu and decided on a fresh tomato in a sauce as well as a mix of greens, including spinach & arugula. You can find Farm Rich mozzerella sticks, and all of their products, in the frozen foods section at Walmart.
While you’re there, stop by the fresh produce section and pick up the fresh tomatoes, greens and fresh herbs to complete the recipe.
To make this dish, which you can do quickly and serve as an appetizer or first-course, you’ll just need your oven preheated to 450, the ingredients gathered and plates. Because you’ll want the mozzarella sticks warm when served, you’ll want to assemble these right away.
While the oven is heating, take the chopped onion, fresh basil and tomato – dice and mix with 1 tsp olive oil, salt, pepper and 3 tbsp of your favorite tomato sauce in a small sauce pan. Simmer until well heated. Cover and set aside.
Prepare the plate by adding a slice of tomato, greens and then your mozzarella straight from the oven.
You can leave the mozzarella sticks as is, or you can press them down flatter with the side of a spatula, which I prefer to do. Then, while still warm, place on top of the tomato and greens,
Top with another tomato, layer of greens and finally, your tomato sauce. These are great warm, so you should try to serve right away – assembling them right from the oven and serving quickly. The melted mozzarella, with the fresh tomato, greens and sauce is an amazing combination!

- 1 Large Tomato - Ripe. Sliced in ½ in thick slices
- 3 c. greens of choice, rinsed and dried (arugula, spinach)
- ½ c. chopped onions
- 2 small tomatoes - diced in large chunks
- Farm Rich Breaded Mozzarella Sticks (2-3 per stack)
- salt & pepper to taste
- Start by pre-heating oven to 45) and cook mozzarella sticks according to instructions
- Meanwhile, take diced tomatoes, & add 2 tbsp of your favorite tomato sauce. Simmer in ½ tbsp of olive oil. Set aside, covered to stay warm.
- Layer tomato, greens on plate. Top with 2-3 mozzarella sticks hot from oven. I like to gently press together.
- Finish with another layer of tomato, greens and finally top with chunky sauce mixture.
